self hosting should not be problematic! It should empower you :)
To completely remove the bloggy look and feel you will need to modify your theme and settings.
Did you check the "appearance" menu?
Did you try to find themes which are more like a CMS?
Or do you intend to modify your theme yourself?
There are several plugins to help you to use Wordpress like a CMS, for example: http://wordpress.org/extend/plugins/disable-comments/
